  • Author: Alexander Knight

  • Yield: 4 servings
  • Diet: Vegetarian

Description

A vibrant and aromatic side dish, this Saffron Rice Pilaf is a beautiful addition to any meal, featuring fluffy basmati rice infused with the golden hue and delicate flavor of saffron threads.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 1 cup basmati rice, rinsed
  • 2 cups chicken broth
  • 1/4 teaspoon saffron threads
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Warm the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  2. Stir in the rinsed basmati rice and cook for 1 minute, stirring constantly, until the grains are lightly toasted.
  3. Pour in the chicken broth, add the saffron threads, salt, and pepper. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low, cover the saucepan tightly, and simmer for 15-20 minutes, or until the liquid is absorbed and the rice is tender.
  5. Remove the saucepan from the heat and let it sit, covered, for 5 minutes.
  6. Fluff the rice gently with a fork before serving.

Notes

  • Rinsing the rice helps remove excess starch, leading to fluffier grains.
  • Gently crush the saffron threads between your fingers before adding them to release more color and flavor.
  • Adjust salt and pepper to your preference.
