- 1 pound smoked sausage, sliced into rounds
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (14.5 ounce) can diced tomatoes, undrained
- 4 cups chicken broth
- 1 teaspoon Cajun seasoning (or to taste)
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1 1/2 cups long-grain white rice, uncooked
- 1 cup frozen peas
- 1 cup shredded sharp cheddar cheese
Instructions
- Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the sliced smoked sausage and cook until lightly browned, about 4 to 5 minutes. Remove the sausage with a slotted spoon and set it aside, leaving any rendered fat in the skillet.
- Add the chopped onion to the skillet and cook until softened, about 3 minutes. Add the minced garlic and cook for 1 minute more until fragrant.
- Stir in the diced tomatoes (with their juice), chicken broth, Cajun seasoning, oregano, and black pepper. Bring the mixture to a boil.
- Stir in the uncooked rice. Reduce the heat to low, cover the skillet, and simmer for 15 to 20 minutes, or until the rice has absorbed most of the liquid and is tender. Do not lift the lid during this time.
- Once the rice is cooked, remove the skillet from the heat. Gently stir in the reserved smoked sausage and the frozen peas. Cover and let it stand for 5 minutes to allow the peas to heat through.
- Stir in the shredded cheddar cheese until it melts and the mixture becomes creamy. Serve immediately for a delicious comfort food rice dish.
