  • 1 tablespoon olive oil
  • 1 pound Italian sausage, casings removed
  • 1 medium yellow onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (16 ounce) package shelf-stable or refrigerated potato gnocchi
  • 1 cup heavy cream
  • 2 cups fresh spinach


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the Italian sausage and cook, breaking it up with a spoon, until browned. Drain off any excess grease.
  2. Add the onion, carrots, and celery to the pot. Cook until the vegetables soften, about 5 to 7 minutes.
  3. Stir in the garlic and cook for 1 minute until fragrant.
  4. Pour in the chicken broth and add the diced tomatoes, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
  5. Add the gnocchi to the simmering soup. Cook according to the package directions, usually about 3 to 5 minutes, until the gnocchi float.
  6. Reduce the heat to low. Stir in the heavy cream until the broth is smooth and creamy. Do not let the soup boil after adding the cream.
  7. Stir in the fresh spinach until it wilts completely, about 1 minute.
  8. Serve the soup hot.

Notes

  • For a richer flavor, use sweet or hot Italian sausage based on your preference.
  • If you prefer kale over spinach, add it at the same time as the spinach and cook until tender.
  • You can substitute half-and-half for heavy cream for a slightly lighter broth, though it will be less rich.
