Instructions

  1. Preheat your oven to 375°F (190°C). Grease a 12-cup muffin tin or line it with paper liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt, black pepper, and garlic powder.
  3. In a separate medium bowl, whisk together the eggs, milk, and vegetable oil until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the grated zucchini, shredded cheddar cheese, chopped chives, and chopped parsley.
  6. Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  7. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
