  • 1 block (14-16 oz) extra-firm tofu, pressed and cubed
  • 2 tablespoons cornstarch
  • 2 tablespoons sesame oil, divided
  • 1 tablespoon soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 cup broccoli florets
  • 1 cup sliced carrots
  • 1 cup snow peas
  • 1/4 cup sliced red bell pepper
  • 2 tablespoons chopped green onions, for garnish
  • 1 tablespoon sesame seeds, for garnish


Instructions

  1. In a bowl, toss the cubed tofu with cornstarch until evenly coated.
  2. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
  3. Add the coated tofu and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from skillet and set aside.
  4. In a small bowl, whisk together soy sauce, rice vinegar, honey or maple syrup, grated ginger, and minced garlic.
  5. Add the remaining 1 tablespoon of sesame oil to the skillet.
  6. Add broccoli, carrots, snow peas, and red bell pepper to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
  7. Return the crispy tofu to the skillet.
  8. Pour the sauce over the tofu and vegetables. Toss gently to coat everything evenly.
  9. Cook for another 1-2 minutes until the sauce has slightly thickened.
  10. Serve hot, garnished with chopped green onions and sesame seeds.

Notes

  • Ensure you press the tofu well to remove excess water for crispier results.
  • Adjust the amount of ginger and garlic to your preference.
  • Feel free to add other vegetables like mushrooms, zucchini, or snap peas.
