- 1 block (14-16 oz) extra-firm tofu, pressed and cubed
- 2 tablespoons cornstarch
- 2 tablespoons sesame oil, divided
- 1 tablespoon soy sauce
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 cup broccoli florets
- 1 cup sliced carrots
- 1 cup snow peas
- 1/4 cup sliced red bell pepper
- 2 tablespoons chopped green onions, for garnish
- 1 tablespoon sesame seeds, for garnish
Instructions
- In a bowl, toss the cubed tofu with cornstarch until evenly coated.
- Heat 1 tablespoon of sesame oil in a large skillet or wok over medium-high heat.
- Add the coated tofu and cook until golden brown and crispy on all sides, about 5-7 minutes. Remove tofu from skillet and set aside.
- In a small bowl, whisk together soy sauce, rice vinegar, honey or maple syrup, grated ginger, and minced garlic.
- Add the remaining 1 tablespoon of sesame oil to the skillet.
- Add broccoli, carrots, snow peas, and red bell pepper to the skillet. Stir-fry for 3-5 minutes until vegetables are tender-crisp.
- Return the crispy tofu to the skillet.
- Pour the sauce over the tofu and vegetables. Toss gently to coat everything evenly.
- Cook for another 1-2 minutes until the sauce has slightly thickened.
- Serve hot, garnished with chopped green onions and sesame seeds.
Notes
- Ensure you press the tofu well to remove excess water for crispier results.
- Adjust the amount of ginger and garlic to your preference.
- Feel free to add other vegetables like mushrooms, zucchini, or snap peas.
