- 1 tablespoon olive oil
- 1 pound ground turkey
- 1 cup chopped onion
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 cup frozen peas
- 1 cup frozen corn
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1.5 cups low-sodium chicken broth
- 2 tablespoons tomato paste
- 2 pounds potatoes, peeled and quartered
- 1/4 cup milk
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Mash the potatoes with milk and butter until smooth. Season with salt and pepper. Set aside.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add ground turkey and cook, breaking it up, until browned. Drain any excess fat.
- Add onion, carrots, and celery to the skillet. Cook until softened, about 5-7 minutes.
- Stir in minced garlic, frozen peas, frozen corn, thyme, rosemary, salt, and pepper. Cook for 2 minutes until fragrant.
- Sprinkle flour over the turkey and vegetable mixture and stir to coat. Cook for 1 minute.
- Gradually whisk in chicken broth and tomato paste until well combined. Bring to a simmer and cook until the sauce has thickened, about 5 minutes.
- Spoon the mashed potato topping evenly over the turkey mixture.
- Bake for 20-25 minutes, or until the topping is golden brown and the filling is bubbly.
Notes
- For extra flavor, you can add a splash of Worcestershire sauce to the meat mixture.
- Feel free to add other vegetables you enjoy, like mushrooms or bell peppers.
