  • 1 pound smoked sausage, cut into 1-inch pieces
  • 1 pound small red potatoes, quartered
  • 1/2 cup melted butter
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley, for garnish


Instructions

  1. Preheat your oven, grill, or prepare your campfire.
  2. Tear off four large pieces of heavy-duty aluminum foil.
  3. In a large bowl, combine the shrimp, sausage, and potatoes.
  4. In a small bowl, whisk together the melted butter, Cajun seasoning, garlic powder, smoked paprika, and black pepper.
  5. Pour the butter mixture over the shrimp, sausage, and potatoes. Toss gently to coat everything evenly.
  6. Divide the mixture equally among the four foil pieces, placing it in the center of each.
  7. Bring up the sides of the foil and seal tightly to create packets. Ensure they are well-sealed to prevent leakage.
  8. Place the foil packets on your cooking surface.
  9. Cook for 15-20 minutes, or until the potatoes are tender and the shrimp are pink and cooked through.
  10. Carefully open the packets (watch out for steam!) and garnish with fresh parsley before serving.
