  • 12 small corn or flour tortillas
  • For the Avocado Crema: 1 ripe avocado
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon lime juice
  • 1 tablespoon water (or more, to thin)
  • Pinch of salt
  • Optional toppings: Shredded cabbage, extra cilantro


Instructions

  1. Prepare the avocado crema: Combine the avocado, Greek yogurt, lime juice, water, and salt in a small food processor or blender. Blend until completely smooth, adding more water if needed to reach a drizzling consistency. Set aside.
  2. Season the shrimp: In a medium bowl, toss the shrimp with olive oil, chili powder, cumin, salt, and pepper until coated.
  3. Cook the shrimp: Heat a large skillet over medium-high heat. Add the seasoned shrimp in a single layer. Cook for 2 to 3 minutes per side until pink and opaque.
  4. Add flavor: Remove the skillet from the heat. Immediately toss the cooked shrimp with the 1/4 cup of fresh lime juice and 2 tablespoons of chopped cilantro.
  5. Warm the tortillas: Warm the tortillas according to package directions, either in a dry skillet or wrapped in a damp paper towel in the microwave.
  6. Assemble the tacos: Fill each warm tortilla with the cilantro lime shrimp. Top with shredded cabbage (if using) and drizzle generously with the avocado crema. Serve immediately.

Notes

  • For extra heat, add a pinch of cayenne pepper to the shrimp seasoning mix.
