Ingredients

  • 1 red onion, thinly sliced
  • 1 green bell pepper, deseeded and chopped
  • 100g feta cheese, crumbled
  • 50g Kalamata olives
  • 4 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp dried oregano
  • Salt to taste
  • Black pepper to taste


Instructions

  1. Combine the cucumber, tomatoes, red onion, and green bell pepper in a large bowl.
  2. Add the crumbled feta cheese and Kalamata olives to the bowl.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, and dried oregano.
  4. Pour the dressing over the salad.
  5. Season with salt and pepper to taste.
  6. Gently toss to combine.
  7. Serve immediately.
