Ingredients

  • 1 scoop chocolate protein powder
  • 1 tablespoon cocoa powder
  • 1 tablespoon almond flour
  • 1 tablespoon sweetener (e.g., erythritol or sugar)
  • 1/4 teaspoon baking powder
  • Pinch of salt
  • 1 tablespoon unsweetened applesauce
  • 1 tablespoon milk (dairy or non-dairy)
  • 1 teaspoon melted coconut oil or butter
  • 1 tablespoon chocolate chips (optional)


Instructions

  1. Combine the protein powder, cocoa powder, almond flour, sweetener, baking powder, and salt in a microwave-safe mug. Mix dry ingredients well.
  2. Add the applesauce, milk, and melted oil/butter to the dry mixture. Stir until just combined; do not overmix.
  3. Fold in the chocolate chips, if using.
  4. Microwave on high for 60 to 90 seconds. Cooking time varies based on microwave wattage. Check after 60 seconds.
  5. The brownie is done when the edges look set but the center is still slightly soft for a fudgy texture.
  6. Let cool in the mug for 2 minutes before eating directly from the mug.
