Description

Make a crispy, buttery Cuban grilled cheese using a hot griddle and firm pressing for maximum crunch and melted cheese.


Ingredients

  • 2 slices Cuban bread or sturdy white bread
  • 1 tablespoon unsalted butter, softened
  • 1 teaspoon yellow mustard
  • 2 slices Swiss cheese
  • 2 slices deli ham
  • 2 ounces slow-roasted mojo pork, thinly sliced
  • 4 thin dill pickle chips


Instructions

  1. Spread the softened butter evenly on one side of each slice of bread.
  2. Flip the bread slices over. Spread the mustard on the unbuttered side of one slice.
  3. Layer the ingredients on the unbuttered side of the first slice: Swiss cheese, ham, mojo pork, pickle chips, and the remaining slice of Swiss cheese. Top with the second slice of bread, butter-side up.
  4. Heat a heavy skillet or griddle over medium heat. Place the sandwich on the hot surface.
  5. Place a heavy, flat object (like another pan or a foil-wrapped brick) on top of the sandwich to press it down firmly.
  6. Grill for 3 to 4 minutes until the bottom side is golden brown and crisp.
  7. Flip the sandwich, reapply the weight, and grill the second side for another 3 to 4 minutes until golden brown and the cheese is fully melted.
  8. Remove from the heat, slice diagonally, and serve immediately while sizzling hot.

Notes

  • For extra crispness, you can lightly brush the outside of the sandwich with mayonnaise instead of butter before grilling.
  • Use a medium-low heat setting if your griddle runs very hot to prevent the butter from burning before the cheese melts.
  • Ensure your roast pork is thinly sliced so the sandwich presses evenly.
