  • 1.5 pounds large shrimp, peeled and deveined
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil, divided
  • 1 large onion, thinly sliced
  • 2 bell peppers (any color), thinly sliced
  • 1 lime, juiced
  • 8 small flour tortillas
  • Optional toppings: sour cream, shredded cheese, salsa, guacamole, chopped cilantro


Instructions

  1. In a bowl, toss the shrimp with chili powder, cumin, smoked paprika, garlic powder, onion powder, cayenne pepper (if using), salt, and black pepper.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  3. Add the remaining 1 tablespoon of olive oil to the same skillet. Add the sliced onion and bell peppers. Cook, stirring occasionally, for 5-7 minutes, until softened and slightly charred.
  4. Return the cooked shrimp to the skillet with the vegetables. Add the lime juice and stir to combine. Cook for another minute to heat through.
  5. Warm the tortillas according to package directions.
  6. Serve the shrimp and vegetable mixture in the warm tortillas. Add your favorite toppings.

Notes

  • For extra flavor, marinate the shrimp for at least 15 minutes before cooking.
  • Feel free to add other vegetables like mushrooms or zucchini.
