- 2 large zucchini
- 1 tablespoon olive oil
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- Optional: cooked chicken or shrimp for topping
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the zucchini and slice them in half lengthwise.
- Use a spoon to scoop out the seeds and some of the flesh from the center of each zucchini half, creating a boat shape.
- Brush the inside and outside of the zucchini boats with olive oil. Place them cut-side down on a baking sheet.
- Bake for 10-12 minutes, or until slightly tender.
- While the zucchini bakes, prepare the Alfredo sauce. Melt the butter in a saucepan over medium heat.
- Add the minced garlic and cook for about 1 minute until fragrant, being careful not to burn it.
- Pour in the heavy cream and bring to a gentle simmer.
- Cook, stirring occasionally, until the sauce thickens, about 5-7 minutes.
- Remove the saucepan from the heat and stir in the grated Parmesan cheese, salt, and pepper until the cheese is melted and the sauce is smooth.
- Carefully flip the zucchini boats so they are cut-side up.
- Spoon the Alfredo sauce generously into each zucchini boat.
- If desired, top with cooked chicken or shrimp.
- Return the zucchini boats to the oven and bake for another 8-10 minutes, or until the zucchini is tender and the sauce is bubbly.
- Serve hot and enjoy your guilt-free comfort food!

- You can adjust the amount of garlic and Parmesan cheese to your preference.
- For a richer sauce, use full-fat heavy cream.
