Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin pan with paper liners.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In a separate medium bowl, whisk together the granulated sugar, brown sugar, egg, applesauce, buttermilk, and vanilla extract until smooth.
  4. Add the mashed bananas to the wet ingredients and stir to combine.
  5. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix; a few lumps are fine.
  6. Gently fold in the mini chocolate chips.
  7. Divide the batter evenly among the 12 muffin cups.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
