- 1.5 lbs boneless, skinless chicken breasts
- 1 (32 ounce) carton chicken broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 (10 ounce) can condensed cream of chicken soup
- 1 cup water
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
- 1 (19 ounce) package refrigerated cheese tortellini
- 1 cup fresh spinach, chopped
- 1/2 cup heavy cream (optional, for creamier soup)
- Grated Parmesan cheese for serving
Instructions
- Place chicken breasts in the bottom of your slow cooker.
- Pour in chicken broth, diced tomatoes, cream of chicken soup, and water.
- Stir in basil, oregano, garlic powder, salt, and pepper.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours, until chicken is cooked through and easily shredded.
- Remove chicken from the slow cooker and shred it using two forks. Return shredded chicken to the slow cooker.
- Add tortellini and chopped spinach to the slow cooker. If using, stir in heavy cream.
- Cover and cook on high for an additional 15-20 minutes, or until tortellini is tender.
- Serve hot, garnished with grated Parmesan cheese.
Notes
- For a vegetarian version, omit the chicken and use vegetable broth. You can add extra vegetables like carrots or celery.
- Adjust seasonings to your preference.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
