Slow Cooker Garlic Butter Beef with Potatoes

Description

Make tender beef and potatoes easily in your slow cooker using a rich garlic butter sauce. This is a simple, set-it-and-forget-it meal.


Ingredients

  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 1.5 lbs baby potatoes, halved
  • 1 cup beef broth
  • 1/2 cup (1 stick) unsalted butter
  • 8 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water (for slurry)


Instructions

  1. Place the cubed beef and halved potatoes into the basin of your slow cooker.
  2. In a small saucepan over medium heat, melt the butter. Add the minced garlic and thyme; cook for 1 minute until fragrant. Do not brown the garlic.
  3. Pour the melted garlic butter mixture over the beef and potatoes in the slow cooker.
  4. Add the beef broth, salt, pepper, and Worcestershire sauce to the slow cooker. Stir gently to coat the ingredients.
  5. Cover the slow cooker. Cook on LOW for 7 to 8 hours or on HIGH for 3.5 to 4 hours, until the beef is very tender.
  6. About 30 minutes before serving, remove the lid. Stir the cornstarch slurry into the liquid in the slow cooker. Stir well.
  7. Replace the lid and cook on HIGH for the remaining 30 minutes, or until the sauce has thickened slightly.
  8. Serve hot, spooning the garlic butter sauce over the beef and potatoes.

Notes

  • For extra flavor, add one chopped yellow onion with the potatoes.
  • If you prefer smaller potatoes, use Yukon Gold or red potatoes and cut them into uniform 1-inch pieces.
  • If you use a leaner cut of beef, like sirloin, reduce the cooking time slightly to prevent drying.
  • Serve with steamed green beans or a simple side salad.
