  • 1/4 cup chocolate sandwich cookie crumbs


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the chocolate chips.
  6. Press about two-thirds of the cookie dough evenly into the bottom of the prepared baking pan.
  7. In a medium bowl, beat together the softened cream cheese, granulated sugar, egg yolk, and vanilla extract until smooth.
  8. Spread the cream cheese mixture evenly over the cookie dough layer.
  9. In a small bowl, combine the crushed chocolate sandwich cookies with the melted butter, granulated sugar, brown sugar, flour, salt, and cookie crumbs. Mix until well combined and crumbly.

  11. Dollop the remaining one-third of the cookie dough over the crumb topping and gently spread to cover.
