Description
A recipe for a small batch of soft cinnamon rolls featuring a rich pistachio cream filling and glaze.
Ingredients
Scale
- 1/2 cup all-purpose flour
- 1 tablespoon granulated sugar
- 1/4 teaspoon instant dry yeast
- 1/8 teaspoon salt
- 3 tablespoons warm milk (about 105-115°F)
- 1 tablespoon unsalted butter, melted, plus more for greasing
- 1 tablespoon unsalted butter, softened (for filling)
- 1 tablespoon brown sugar (for filling)
- 1/2 teaspoon ground cinnamon (for filling)
- 2 tablespoons pistachio paste or finely ground pistachios mixed with 1 teaspoon oil (for filling)
- 2 tablespoons powdered sugar (for glaze)
- 1/2 teaspoon pistachio paste (for glaze)
- 1/2 teaspoon milk or water (for glaze)
Instructions
- Combine flour, granulated sugar, yeast, and salt in a small bowl. Add warm milk and melted butter. Mix until a shaggy dough forms.
- Knead the dough on a lightly floured surface for 3 minutes until smooth. Place the dough in a lightly buttered small bowl, cover, and let it rest in a warm spot for 30 minutes until slightly puffy.
- While the dough rests, prepare the filling: Mix the softened butter, brown sugar, cinnamon, and pistachio paste until combined.
- Roll the dough out into a small rectangle, about 4×6 inches. Spread the pistachio filling evenly over the dough.
- Roll the dough tightly along the long edge to form a log. Cut the log in half to create two small rolls.
- Place the two rolls snugly in a small, greased oven-safe ramekin or small loaf pan (about 4×3 inches). Cover and let rise for another 15 minutes.
- Preheat your oven to 375°F (190°C). Bake for 15-18 minutes, or until golden brown.
- While the rolls cool slightly, prepare the glaze: Whisk together the powdered sugar, pistachio paste, and milk until smooth.
- Drizzle the glaze over the warm rolls before serving.
Notes
- If you do not have pistachio paste, finely grind 2 tablespoons of shelled pistachios with 1 teaspoon of neutral oil until a paste forms.
- You can use a small 4-inch round cake pan if a ramekin is unavailable.
- For a stronger cinnamon flavor, increase the filling cinnamon to 3/4 teaspoon.
