Description

Whip up a comforting S’mores Baked Oatmeal for a nostalgic breakfast that tastes just like your favorite campfire treat. This recipe brings the gooey chocolate, toasted marshmallow, and graham cracker flavor right to your morning.

Ingredients

Scale
  • 1.5 cups rolled oats
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup milk (dairy or non-dairy)
  • 1 large egg
  • 0.25 cup maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cup graham cracker crumbs
  • 0.5 cup semi-sweet chocolate chips
  • 0.5 cup mini marshmallows

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease an 8×8 inch baking dish.
  2. In a large bowl, whisk together the rolled oats, baking powder, salt, and cinnamon.
  3. In a separate bowl, mix the milk, egg, maple syrup, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix.
  5. Gently fold in the graham cracker crumbs and chocolate chips.
  6. Pour the oatmeal mixture into the prepared baking dish.
  7. Sprinkle the mini marshmallows evenly over the top.
  8. Bake for 25-30 minutes, or until the edges are set and the marshmallows are lightly golden brown.
  9. Let it cool for a few minutes before serving warm.

Notes

  • You can crush graham crackers by placing them in a zip-top bag and crushing them with a rolling pin.
  • For an extra gooey center, reserve a few chocolate chips to sprinkle on top halfway through baking.
  • If you prefer a firmer oatmeal, bake for an extra 5 minutes.
  • Serve with a drizzle of extra maple syrup if desired.
