Ingredients

  • 1 cup edamame, shelled
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup chopped cilantro
  • For the Dressing:
  • 3 tablespoons soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced


Instructions

  1. Cook the soba noodles according to package directions. Drain and rinse with cold water.
  2. In a large bowl, combine the cooked soba noodles, edamame, shredded carrots, green onions, and cilantro.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, and minced garlic.
  4. Pour the dressing over the noodle mixture and toss gently to combine.
  5. Serve immediately or chill for later.
