Ingredients

- 8 ounces soba noodles
- 1 cup edamame, shelled
- 1/2 cup shredded carrots
- 1/4 cup chopped green onions
- 1/4 cup chopped cilantro
- For the Dressing:
- 3 tablespoons soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
Instructions
- Cook the soba noodles according to package directions. Drain and rinse with cold water.
- In a large bowl, combine the cooked soba noodles, edamame, shredded carrots, green onions, and cilantro.
- In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey or maple syrup, grated ginger, and minced garlic.
- Pour the dressing over the noodle mixture and toss gently to combine.
- Serve immediately or chill for later.
Notes
- You can add other vegetables like bell peppers, cucumber, or snap peas.
- Add grilled chicken, shrimp, or tofu for added protein.
- Garnish with toasted sesame seeds or chopped peanuts for extra flavor and crunch.
