  • 3 1/2 cups all-purpose flour, plus more for dusting
  • 1/2 cup (1 stick) unsalted butter, melted, for brushing

Instructions

  1. In a large bowl, combine the warm milk and yeast. Let it sit for 5 minutes until foamy. This proves your yeast is active.
  2. Add the sugar, egg, 1/4 cup melted butter, and salt to the yeast mixture. Whisk until combined.
  3. Gradually add the flour, one cup at a time, mixing until a shaggy dough forms.
  4. Turn the dough out onto a lightly floured surface. Knead for 6 to 8 minutes until the dough is smooth and elastic. It should spring back when lightly poked.
  5. Place the dough in a lightly oiled bowl, turning to coat. Cover the bowl with plastic wrap or a clean kitchen towel. Let the dough rise in a warm spot for 1 to 1.5 hours, or until doubled in size. This is your first rise.
  6. Gently punch down the risen dough. Divide the dough into 12 equal pieces. Roll each piece into a smooth ball.
  7. Arrange the dough balls in a greased 9×13 inch baking pan, leaving about 1 inch between them for spreading.
  8. Cover the pan loosely and let the rolls rise again in a warm place for 30 to 45 minutes, or until they are puffy. This is your second rise.
  9. Preheat your oven to 375°F (190°C).
  10. Bake the rolls for 15 to 18 minutes, or until they are golden brown on top.
  11. Immediately after removing the rolls from the oven, brush the tops generously with the remaining 1/2 cup of melted butter. If you want a slightly sweet finish like Texas Roadhouse Style Rolls, brush them with the honey-butter mixture instead.
