- 3 lbs sweet potatoes (yams), peeled and sliced into 1/2-inch thick rounds
- 1 cup granulated sugar
- 1/2 cup packed light brown sugar
- 1/2 cup (1 stick) unsalted butter, cut into pieces
- 1/2 cup water
- 1/4 cup light corn syrup (optional, for extra shine)
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- Arrange the sliced sweet potatoes in a single layer in the prepared baking dish.
- In a medium saucepan, combine the granulated sugar, brown sugar, butter, water, corn syrup (if using), cinnamon, nutmeg, and salt.
- Heat the mixture over medium heat, stirring constantly until the butter melts and the sugars dissolve completely. Bring the mixture to a gentle boil, then remove immediately from the heat.
- Stir in the vanilla extract.
- Carefully pour the hot glaze evenly over the sweet potatoes in the baking dish.
- Cover the dish tightly with aluminum foil.
- Bake for 45 minutes.
- Remove the foil and continue baking for another 15 to 25 minutes, basting the yams with the glaze every 10 minutes, until the potatoes are tender and the glaze has thickened and caramelized slightly.
- Remove from the oven and let stand for 5 minutes before serving.
Notes
- For a stovetop method, cook the sweet potatoes in the glaze mixture over medium-low heat, covered, stirring gently every 10 minutes until tender, about 40 minutes total. Uncover for the last 10 minutes to allow the sauce to thicken.
- You can substitute maple syrup for corn syrup if you prefer.
- For a richer color, use dark brown sugar instead of light brown sugar.
