Ingredients

  • 1 cup stone-ground grits
  • 4 cups water
  • 1 cup milk
  • 1/2 cup shredded sharp cheddar cheese
  • 4 tablespoons butter
  • 1 pound large shrimp, peeled and deveined
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon Worcestershire sauce
  • 1/2 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh parsley, chopped, for garnish


Instructions

  1. Bring water and milk to a boil in a medium saucepan.
  2. Gradually whisk in grits, reduce heat to low, cover, and cook for 20-25 minutes, stirring occasionally, until tender and creamy.
  3. Stir in cheddar cheese and 2 tablespoons of butter until melted and smooth. Season with salt and pepper.
  4. While grits are cooking, melt remaining 2 tablespoons of butter in a large skillet over medium-high heat.
  5. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  6. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes.
  7. Add garlic and cook for 1 minute more until fragrant.
  8. Whisk in flour and cook for 1 minute, stirring constantly.
  9. Gradually whisk in chicken broth and heavy cream. Bring to a simmer and cook until the sauce thickens, about 5 minutes.
  10. Stir in Worcestershire sauce and smoked paprika. Season with salt and pepper.
  11. Return shrimp to the skillet and toss to coat in the sauce.
  12. Serve the shrimp and gravy mixture over the creamy grits. Garnish with fresh parsley.
