- 2 cups cooked, shredded chicken breast
- 1 (15 ounce) can black beans, rinsed and drained
- 1 cup frozen corn, thawed
- 1 red bell pepper, diced
- 1/2 cup chopped red onion
- 1/2 cup chopped cilantro
- 1 ripe avocado
- 1/4 cup plain Greek yogurt (or mayonnaise for richer texture)
- 2 tablespoons fresh lime juice
- 1 teaspoon chipotle powder
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups mixed greens (romaine or butter lettuce recommended)
Instructions
- Prepare the dressing: Combine the avocado, Greek yogurt, lime juice, chipotle powder, cumin, salt, and pepper in a food processor or blender. Blend until completely smooth and creamy. Add a teaspoon of water if the dressing is too thick.
- In a large bowl, combine the shredded chicken, black beans, thawed corn, diced red bell pepper, red onion, and cilantro.
- Pour about two-thirds of the dressing over the chicken and vegetable mixture. Toss gently until everything is evenly coated.
- If you are serving immediately, divide the mixed greens among four bowls and top each with the dressed chicken mixture.
- If you are meal prepping, store the dressed chicken mixture separately from the greens in airtight containers for up to four days. Dress individual portions just before eating.
- Serve the salad with extra dressing on the side if desired.

- For a gluten-free option, confirm all your spices are certified gluten-free.
- You can substitute rotisserie chicken for the cooked chicken to speed up preparation time.
- To make this a low-carb chicken salad, omit the black beans and increase the amount of bell pepper or add chopped jicama.
