Southwest Ground Beef and Sweet Potato Skillet

Description

Make this easy one-pan dinner featuring ground beef, sweet potatoes, and Tex-Mex spices. It cooks quickly for a simple weeknight meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 medium sweet potatoes, peeled and diced into 1/2-inch pieces
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1 cup beef broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese (optional topping)


Instructions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart, until browned. Drain off any excess grease.
  2. Add the chopped onion to the skillet and cook until softened, about 3 to 4 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  3. Add the diced sweet potatoes, black beans, diced tomatoes with green chilies, beef broth, chili powder, cumin, oregano, salt, and pepper to the skillet. Stir to combine all ingredients.
  4. Bring the mixture to a simmer. Reduce the heat to medium-low, cover the skillet, and cook for 15 to 20 minutes, or until the sweet potatoes are tender when pierced with a fork. Stir occasionally to prevent sticking.
  5. Remove the lid for the last 5 minutes of cooking if you prefer a thicker sauce.
  6. Remove the skillet from the heat. Sprinkle with shredded cheddar cheese, if using, and cover for 2 minutes until the cheese melts. Serve directly from the skillet.

Notes

  • Cut the sweet potatoes into uniform pieces to ensure even cooking time.
  • For ground turkey, use the same amount and cooking time.
  • If you prefer more heat, add 1/4 teaspoon of cayenne pepper with the other spices.
