Description
A quick and flavorful Italian pasta dish featuring tender shrimp tossed with garlic-infused olive oil and spaghetti. Perfect for a delightful weeknight meal.
Ingredients
Scale
- 1 pound spaghetti
- 1/4 cup olive oil
- 6 cloves garlic, thinly sliced
- 1/2 teaspoon red pepper flakes
- 1 pound large shrimp, peeled and deveined
- 1/4 cup fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
- Cook spaghetti according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
- While pasta is cooking, heat olive oil in a large skillet over medium heat.
- Add sliced garlic and red pepper flakes to the skillet. Cook, stirring often, until garlic is golden brown and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
- Add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, until the shrimp are pink and cooked through.
- Add the drained spaghetti and chopped parsley to the skillet with the shrimp and garlic oil.
- Toss everything together, adding a splash of the reserved pasta water if needed to create a light sauce that coats the pasta.
- Taste and adjust seasoning with salt and pepper.
- Serve immediately.
Notes
- For extra flavor, you can add a squeeze of lemon juice just before serving.
- Feel free to add other vegetables like cherry tomatoes or spinach.
