Description

  • 1 pound spaghetti
  • 1/4 cup olive oil
  • 6 cloves garlic, thinly sliced
  • 1/2 teaspoon red pepper flakes
  • 1 pound large shrimp, peeled and deveined
  • 1/4 cup fresh parsley, chopped
  • Salt and freshly ground black pepper to taste


Instructions

  1. Cook spaghetti according to package directions until al dente. Reserve about 1 cup of pasta water before draining.
  2. While pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add sliced garlic and red pepper flakes to the skillet. Cook, stirring often, until garlic is golden brown and fragrant, about 2-3 minutes. Be careful not to burn the garlic.
  4. Add the shrimp to the skillet. Season with salt and pepper. Cook for 2-3 minutes per side, until the shrimp are pink and cooked through.
  5. Add the drained spaghetti and chopped parsley to the skillet with the shrimp and garlic oil.
  6. Toss everything together, adding a splash of the reserved pasta water if needed to create a light sauce that coats the pasta.
  7. Taste and adjust seasoning with salt and pepper.
  8. Serve immediately.
