  • 1/4 cup milk


Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. Make the streusel: In a small bowl, whisk together the flour, brown sugar, cinnamon, and salt. Cut in the cold butter with a pastry blender or your fingertips until the mixture resembles coarse crumbs. Set aside.
  3. Make the muffins: In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.
  4. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  5. Beat in the eggs one at a time, then stir in the vanilla extract.
  6. In a separate small bowl, whisk together the pumpkin puree and milk.
  7. Alternately add the dry ingredients and the pumpkin mixture to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  8. Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  9. Sprinkle the streusel topping generously over the batter in each muffin cup.
  10. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  11. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
