Description
Make these Spinach Artichoke Lasagna Rolls for a creamy, satisfying comfort dish that everyone will love. They are fun to assemble and look impressive on the plate.

- 12 lasagna noodles
- 1 tablespoon olive oil
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
- 1 (14 ounce) can artichoke hearts, drained and chopped
- 15 ounces ricotta cheese
- 1 cup grated Parmesan cheese, divided
- 1 large egg, lightly beaten
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 24 ounces marinara sauce
- 2 cups shredded mozzarella cheese
Instructions
- Cook lasagna noodles according to package directions until al dente. Drain and lay flat on wax paper.
- Heat olive oil in a skillet over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic and cook for 1 minute more. Remove from heat.
- In a large bowl, combine the cooked onion and garlic mixture, squeezed spinach, chopped artichoke hearts, ricotta cheese, 1/2 cup of the Parmesan cheese, egg, salt, and pepper. Mix well to combine.
- Spread about 1/2 cup of marinara sauce in the bottom of a 9×13 inch baking dish.
- Take one cooked lasagna noodle and spread about 1/4 cup of the ricotta mixture evenly over the entire surface.
- Tightly roll up the noodle starting from one end. Place the roll seam-side down in the prepared baking dish. Repeat with remaining noodles and filling.
- Pour the remaining marinara sauce over the top of the rolls.
- Sprinkle the mozzarella cheese and the remaining 1/2 cup of Parmesan cheese over the sauce.
- Bake at 375°F (190°C) for 25 to 30 minutes, or until the cheese is melted and bubbly and the sauce is hot.
Notes
- Squeeze the spinach very dry; excess water makes the filling runny.
- You can prepare these rolls ahead of time and refrigerate them before baking. Add about 10 minutes to the baking time if baking straight from the refrigerator.
- Use your favorite quality marinara sauce for the best flavor.
