- 1 package (17.3 ounces) frozen puff pastry, thawed
- 1 package (10 ounces) frozen chopped spinach, thawed and squeezed dry
- 4 ounces feta cheese, crumbled
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1/4 teaspoon black pepper
- 1 large egg, beaten (for egg wash)
Instructions
- Preheat your oven to 400°F (200°C). Line baking sheets with parchment paper.
- In a medium bowl, combine the squeezed-dry spinach, crumbled feta cheese, grated Parmesan cheese, minced garlic, and black pepper. Mix well until everything is evenly distributed.
- Unfold the thawed puff pastry sheets onto a lightly floured surface. Cut each sheet into 9 equal squares.
- Place about a tablespoon of the spinach and feta mixture into the center of each puff pastry square.
- Fold the puff pastry squares in half diagonally to form triangles, or bring the four corners to the center, pinching to seal. Ensure the filling is enclosed.
- Place the assembled bites onto the prepared baking sheets.
- Brush the tops of the bites with the beaten egg wash for a golden finish.
- Bake for 15-20 minutes, or until the puff pastry is puffed up, golden brown, and flaky.
- Let cool slightly before serving.
Notes
- Make sure the spinach is very well squeezed to avoid a soggy bottom.
- You can add a pinch of nutmeg to the filling for an extra layer of flavor.
- These can be made ahead and reheated before serving.
