Description

Spinach and Ricotta Lasagna Roll-Ups offer a delightful twist on classic lasagna, making serving easy and fun. Tender pasta sheets are filled with creamy ricotta and fresh spinach, then baked in a rich sauce.


Ingredients

  • 12 lasagna noodles
  • 1 tablespoon olive oil
  • 1 cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 (15 ounce) container ricotta cheese
  • 1 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 (24 ounce) jars marinara sauce
  • 2 cups shredded mozzarella cheese


Instructions

  1. Preheat your oven to 375 degrees F (190 degrees C).
  2. Cook lasagna noodles according to package directions. Drain and lay flat on a clean surface.
  3. Heat olive oil in a skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. In a large bowl, combine the cooked onion and garlic, squeezed spinach, ricotta cheese, Parmesan cheese, egg, salt, and pepper. Mix well.
  5. Spread 1 cup of marinara sauce evenly in the bottom of a 9×13 inch baking dish.
  6. Spread about 1/4 cup of the ricotta mixture evenly over each cooked lasagna noodle.
  7. Roll up each noodle and place seam-side down in the prepared baking dish.
  8. Pour the remaining marinara sauce over the roll-ups.
  9. Sprinkle the mozzarella cheese evenly over the top.
  10. Cover the dish with foil and bake for 20 minutes.
  11. Remove the foil and bake for another 10-15 minutes, or until the cheese is melted and bubbly.
  12. Let stand for 5 minutes before serving.

Notes

  • For a richer flavor, you can add a pinch of nutmeg to the ricotta mixture.
  • If you prefer a smoother texture, blend the ricotta mixture in a food processor.
  • Feel free to add cooked Italian sausage or ground beef to the ricotta mixture for a heartier dish.
