  • 1 large red onion, cut into 1-inch pieces
  • 2 bell peppers (any color), cut into 1-inch pieces
  • 8 ounces cremini mushrooms, whole or halved
  • 12 wooden or metal skewers (if using wood, soak for 30 minutes)


Instructions

  1. In a medium bowl, whisk together the balsamic vinegar, olive oil, minced garlic, Dijon mustard, oregano, and pepper to create the marinade.
  2. Place the cubed steak into a resealable bag or shallow dish. Pour the marinade over the steak, ensuring all pieces are coated. Marinate in the refrigerator for at least 2 hours, or up to 6 hours.
  3. Remove the steak from the marinade, discarding the excess liquid.
  4. Thread the steak cubes onto the skewers, alternating with pieces of red onion, bell pepper, and mushrooms. Try to keep the pieces relatively uniform in size for even cooking.
  5. Preheat your grill to medium-high heat (about 400°F or 200°C). Lightly oil the grates.
  6. Place the skewers on the hot grill. Cook for 3 to 4 minutes per side, turning carefully, until the steak reaches your desired doneness (130°F for medium-rare).
  7. Remove the kabobs from the grill and let them rest for 5 minutes before serving.
