Description

Make chewy strawberry blondies using just one bowl for simple preparation and minimal cleanup.

Ingredients

Scale
  • 1/2 cup unsalted butter, melted
  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup fresh strawberries, chopped
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
  2. In a large mixing bowl, whisk the melted butter and both sugars together until fully combined.
  3. Add the egg and vanilla extract to the bowl. Whisk until the mixture is smooth and glossy.
  4. Add the flour, baking powder, and salt to the wet ingredients. Use a spatula to mix until just combined. Do not overmix the batter.
  5. Gently fold in the chopped strawberries and white chocolate chips until they are evenly distributed throughout the batter.
  6. Spread the batter evenly into the prepared baking pan.
  7. Bake for 25 to 30 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
  8. Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
  9. Cut into squares and serve.

Notes

  • For a fudgier texture, slightly underbake them by about 2 minutes.
  • If using frozen strawberries, do not thaw them first; add them directly to the batter.
  • You can substitute freeze-dried strawberries for fresh ones by crushing them slightly before adding them to the batter.
