Description
Make chewy strawberry blondies using just one bowl for simple preparation and minimal cleanup.
Ingredients
Scale
- 1/2 cup unsalted butter, melted
- 1 cup packed light brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup fresh strawberries, chopped
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides for easy removal.
- In a large mixing bowl, whisk the melted butter and both sugars together until fully combined.
- Add the egg and vanilla extract to the bowl. Whisk until the mixture is smooth and glossy.
- Add the flour, baking powder, and salt to the wet ingredients. Use a spatula to mix until just combined. Do not overmix the batter.
- Gently fold in the chopped strawberries and white chocolate chips until they are evenly distributed throughout the batter.
- Spread the batter evenly into the prepared baking pan.
- Bake for 25 to 30 minutes, or until the edges are set and a toothpick inserted near the center comes out with moist crumbs attached, not wet batter.
- Let the blondies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang.
- Cut into squares and serve.
Notes
- For a fudgier texture, slightly underbake them by about 2 minutes.
- If using frozen strawberries, do not thaw them first; add them directly to the batter.
- You can substitute freeze-dried strawberries for fresh ones by crushing them slightly before adding them to the batter.
