Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
- In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
- In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Alternate adding the dry ingredients and the buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
- Gently fold in the diced fresh strawberries.
- In a separate small bowl, beat the softened cream cheese, 1/4 cup powdered sugar, and 1 teaspoon lemon zest until smooth.
- Pour half of the strawberry batter into the prepared loaf pan. Dollop the cream cheese mixture evenly over the batter. Pour the remaining strawberry batter on top.
- Use a knife or skewer to gently swirl the cream cheese mixture through the batter a few times to create a marbled effect.
- Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
- Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
- While the bread cools, whisk together the 1/2 cup powdered sugar and 2 tablespoons lemon juice to create the glaze. Drizzle the glaze over the cooled bread.
Notes
- For the best swirl, ensure your cream cheese mixture is soft but not runny.
- If your glaze is too thick, add lemon juice, 1 teaspoon at a time, until you reach a drizzling consistency.
- You can use frozen strawberries, but thaw them first and gently pat them dry before adding them to the batter.
