Strawberry Cream Cheese Swirl Bread with Lemon Glaze

Description

This recipe offers a delightful twist on classic strawberry bread by incorporating a rich, tangy cream cheese swirl and finishing it with a bright lemon glaze.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 1 1/2 cups fresh strawberries, diced
  • 8 ounces cream cheese, softened
  • 1/4 cup powdered sugar (for swirl)
  • 1 teaspoon lemon zest (for swirl)
  • 1/2 cup powdered sugar (for glaze)
  • 2 tablespoons fresh lemon juice (for glaze)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, cream together the softened butter and 1 cup of granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Alternate adding the dry ingredients and the buttermilk to the butter mixture, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  6. Gently fold in the diced fresh strawberries.
  7. In a separate small bowl, beat the softened cream cheese, 1/4 cup powdered sugar, and 1 teaspoon lemon zest until smooth.
  8. Pour half of the strawberry batter into the prepared loaf pan. Dollop the cream cheese mixture evenly over the batter. Pour the remaining strawberry batter on top.
  9. Use a knife or skewer to gently swirl the cream cheese mixture through the batter a few times to create a marbled effect.
  10. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out clean.
  11. Let the bread cool in the pan for 10 minutes before turning it out onto a wire rack to cool completely.
  12. While the bread cools, whisk together the 1/2 cup powdered sugar and 2 tablespoons lemon juice to create the glaze. Drizzle the glaze over the cooled bread.

Notes

  • For the best swirl, ensure your cream cheese mixture is soft but not runny.
  • If your glaze is too thick, add lemon juice, 1 teaspoon at a time, until you reach a drizzling consistency.
  • You can use frozen strawberries, but thaw them first and gently pat them dry before adding them to the batter.
