Ingredients

- 1 cup couscous
- 1 1/2 cups boiling water or vegetable broth
- 1 cup sliced strawberries
- 1/2 cup chopped fresh mint
- 1/4 cup chopped fresh parsley
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- Place the couscous in a medium bowl. Pour the boiling water or broth over the couscous. Cover and let stand for 5 minutes, or until the liquid is absorbed.
- Fluff the couscous with a fork.
- Add the sliced strawberries, chopped mint, and chopped parsley to the couscous.
- In a small bowl, whisk together the olive oil and lemon juice.
- Pour the dressing over the couscous mixture and toss gently to combine.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld.
Notes
- For added flavor, you can toast the dry couscous in a dry skillet over medium heat for a few minutes before adding the boiling water or broth.
- Feel free to add other fruits like blueberries or raspberries.
- Chopped cucumber or bell pepper can also be added for extra crunch.
