Description

A refreshing and light salad featuring fluffy couscous, sweet strawberries, and vibrant herbs.


Ingredients

  • 1 cup couscous
  • 1 1/2 cups boiling water or vegetable broth
  • 1 cup sliced strawberries
  • 1/2 cup chopped fresh mint
  • 1/4 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste


Instructions

  1. Place the couscous in a medium bowl. Pour the boiling water or broth over the couscous. Cover and let stand for 5 minutes, or until the liquid is absorbed.
  2. Fluff the couscous with a fork.
  3. Add the sliced strawberries, chopped mint, and chopped parsley to the couscous.
  4. In a small bowl, whisk together the olive oil and lemon juice.
  5. Pour the dressing over the couscous mixture and toss gently to combine.
  6. Season with salt and pepper to taste.
  7. Serve immediately or chill in the refrigerator for at least 30 minutes to allow the flavors to meld.

Notes

  • For added flavor, you can toast the dry couscous in a dry skillet over medium heat for a few minutes before adding the boiling water or broth.
  • Feel free to add other fruits like blueberries or raspberries.
