  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 4 large eggs
  • 1/4 cup strawberry puree
  • 1 teaspoon vanilla extract
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract
  • Fresh strawberries for garnish


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, combine cake mix, flour, sugar, baking powder, and salt.
  3. In a separate bowl, whisk together buttermilk, oil, eggs, strawberry puree, and vanilla extract.
  4. Add wet ingredients to dry ingredients and mix until just combined. Do not overmix.
  5. Pour batter into prepared pan and spread evenly.
  6. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then invert onto a wire rack to cool completely.
  8. While the cake cools, prepare the frosting. In a large bowl, beat cream cheese and butter until smooth and creamy.
  9. Gradually add powdered sugar, alternating with milk, beating until smooth and fluffy.
  10. Stir in vanilla extract.
  11. Once the cake is completely cool, spread frosting evenly over the top.
  12. Garnish with fresh strawberries, if desired.
  13. Cut into squares and serve.
