  • 1 large head of green cabbage
  • 1 pound ground beef
  • 1/2 cup uncooked white rice
  • 1 small onion, finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 cup water
  • 1 tablespoon brown sugar
  • 1 tablespoon white vinegar


Instructions

  1. Bring a large pot of salted water to a boil. Carefully remove the core from the cabbage. Submerge the whole cabbage head in boiling water for 5-10 minutes until outer leaves are pliable. Remove leaves one by one, trimming the thick center vein on each leaf.
  2. In a bowl, mix ground beef, uncooked rice, chopped onion, salt, and pepper. This is your filling.
  3. Lay a cabbage leaf flat. Place about 2 tablespoons of filling near the base of the leaf. Fold the sides in over the filling, then roll tightly from bottom to top. Repeat with remaining leaves and filling.
  4. In a large pot or Dutch oven, mix crushed tomatoes, tomato sauce, water, brown sugar, and vinegar. Stir well.
  5. Arrange the cabbage rolls seam-side down in the sauce mixture in the pot. Add any remaining sauce over the top.
  6. Bring the sauce to a simmer over medium heat. Once simmering, reduce heat to low, cover the pot, and let the rolls cook for 1.5 to 2 hours, or until the cabbage is very tender and the meat is fully cooked.
  7. Serve warm with extra tomato sauce.

Notes

  • You can substitute half the ground beef with ground pork for a richer flavor.
  • For a tangier sauce, increase the amount of white vinegar slightly.
  • If the sauce thickens too much during cooking, add a little more water.
