  • 1/2 cup corn kernels (fresh or frozen)
  • 1/4 cup chopped red onion
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cumin

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and pierce them a few times with a fork.
  3. Rub the sweet potatoes with olive oil and place them on a baking sheet.
  4. Bake for 45-60 minutes, or until tender when pierced with a fork.

  9. Spoon the black bean mixture generously into each sweet potato.
  10. Top with diced avocado and any other desired toppings.
  11. Serve immediately and savor this delightful meal!

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the black bean mixture.
  • You can prepare the black bean filling ahead of time and store it in the refrigerator.
  • If you don’t have fresh cilantro, you can substitute with parsley.
  • Ensure your sweet potatoes are cooked until they are easily pierced with a fork for the best texture.
