  • Vegetable oil, for frying
  • 1/4 cup spicy tuna or salmon mixture (tuna/salmon, spicy mayo, sriracha)
  • 1/4 avocado, thinly sliced
  • 1 tablespoon masago or roe
  • 1 teaspoon toasted sesame seeds
  • Optional: sliced jalapeños, microgreens, eel sauce


Instructions

  1. Cook the sushi rice according to package directions.
  2. In a small bowl, whisk together rice vinegar, sugar, and salt.
  3. Once the rice is cooked, gently fold in the vinegar mixture. Let it cool slightly.
  4. Press the seasoned rice into a greased round mold or shape it by hand into a flat, round disc about 1/2 inch thick.
  5. Heat about 1 inch of vegetable oil in a skillet over medium-high heat.
  6. Carefully place the rice disc into the hot oil and fry for 3-5 minutes per side, until golden brown and crispy.
  7. Remove the crispy rice base from the oil and place it on a wire rack to drain any excess oil.
  8. Spread the spicy tuna or salmon mixture evenly over the crispy rice base.
  9. Arrange the sliced avocado on top.
  10. Sprinkle with masago or roe and toasted sesame seeds.
  11. Add any optional toppings like jalapeños or a drizzle of eel sauce.
  12. Slice and serve immediately.
