  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 1/2 cup pineapple chunks
  • 1/4 cup ketchup
  • 1/4 cup rice vinegar
  • 2 tablespoons brown sugar
  • 1 tablespoon soy sauce
  • 1 teaspoon cornstarch mixed with 2 teaspoons water


Instructions

  1. In a bowl, toss pork pieces with salt and pepper.
  2. Add 1/2 cup cornstarch and toss to coat the pork evenly.
  3. Heat vegetable oil in a large skillet or wok over medium-high heat.
  4. Add pork in a single layer and cook until golden brown and crispy on all sides. Remove pork from skillet and set aside.
  5. Add green and red bell peppers to the skillet and stir-fry for 2-3 minutes until slightly tender.
  6. Add pineapple chunks and stir-fry for another minute.
  7. In a small bowl, whisk together ketchup, rice vinegar, brown sugar, and soy sauce.
  8. Pour the sauce over the vegetables in the skillet. Bring to a simmer.
  9. Add the cornstarch slurry and stir until the sauce thickens.
  10. Return the crispy pork to the skillet and toss to coat evenly with the sauce.
  11. Serve hot, perhaps with steamed rice.
