Description
A recipe for quick-cooking shrimp coated in a sticky, sweet, and slightly spicy pineapple glaze. This dish works well as a main course or an appetizer.

- 1 pound large shrimp, peeled and deveined
- 1 tablespoon olive oil
- 1/2 cup pineapple juice
- 1/4 cup sweet chili sauce
- 2 tablespoons soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1/2 cup diced fresh or canned pineapple chunks (drained if canned)
- 1 teaspoon cornstarch mixed with 1 tablespoon cold water (slurry)
- Salt and black pepper to taste
Instructions
- Pat the shrimp dry and season lightly with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 1-2 minutes per side until pink. Remove the shrimp from the skillet and set aside.
- In the same skillet, combine the pineapple juice, sweet chili sauce, soy sauce, brown sugar, ginger, and garlic. Bring the mixture to a simmer.
- Stir the cornstarch slurry and pour it into the simmering sauce. Cook, stirring constantly, until the sauce thickens enough to coat the back of a spoon, about 1 minute.
- Add the diced pineapple chunks and the cooked shrimp back into the skillet. Toss everything gently to coat the shrimp evenly with the sauce.
- Cook for 1 more minute until the shrimp are heated through.
- Serve immediately over rice or noodles, or serve as an appetizer with toothpicks.
Notes
- For a spicier sauce, add 1/4 teaspoon of red pepper flakes when simmering the sauce ingredients.
- You can substitute frozen pineapple chunks, but make sure they are fully thawed before adding them to the sauce.
- This recipe works well using an air fryer for the shrimp before tossing in the sauce; cook shrimp at 380F for 6-8 minutes.
