  • Diet: Vegetarian

Description

Make these bright, summery Sweet Corn and Zucchini Fritters for a crisp and delicious treat. You will love the fresh taste!

Ingredients

Scale
  • 2 cups sweet corn kernels (fresh or frozen and thawed)
  • 1 medium zucchini, grated and squeezed dry
  • 1/2 cup all-purpose flour
  • 1 large egg, lightly beaten
  • 1/4 cup milk
  • 2 tablespoons chopped fresh chives
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Vegetable oil for frying

Instructions

  1. Grate the zucchini and place it in a clean kitchen towel. Squeeze out as much liquid as possible. This step is key for crispy fritters.
  2. In a large bowl, combine the sweet corn, dried zucchini, flour, egg, milk, chives, baking powder, salt, and pepper.
  3. Mix gently until just combined. Do not overmix the batter.
  4. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat until hot (around 350°F or 175°C).
  5. Drop spoonfuls of the batter into the hot oil, flattening them slightly with the back of the spoon to form fritters. Work in batches to avoid overcrowding the pan.
  6. Fry for 3 to 4 minutes per side, until golden brown and cooked through.
  7. Remove the fritters with a slotted spoon and place them on a plate lined with paper towels to drain excess oil.
  8. Serve immediately and enjoy your fresh, homemade fritters!

Notes

  • Squeezing the water from the zucchini makes a big difference in texture.
  • You can substitute fresh chives with 1 tablespoon of dried parsley if needed.
  • These are best eaten right after cooking for maximum crispness.
