- 1 large sweet potato, cooked and mashed (about 1.5 cups)
- 1 (15-ounce) can black beans, rinsed and drained
- 1/2 cup breadcrumbs (panko or regular)
- 1/4 cup chopped onion
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil (for cooking)
Instructions
- In a large bowl, gently mash the black beans with a fork, leaving some texture.
- Add the mashed sweet potato, breadcrumbs, onion, garlic, chili powder, cumin, smoked paprika, salt, and pepper to the bowl.
- Mix all ingredients thoroughly until just combined. Do not overmix.
- Form the mixture into four equal-sized patties. If the mix is too wet, add a tablespoon more breadcrumbs.
- Heat the olive oil in a skillet over medium heat.
- Carefully place the patties in the hot skillet.
- Cook for 4 to 5 minutes per side, until nicely browned and heated through.
- Serve immediately on your favorite buns with your preferred toppings.
Notes
- Bake the sweet potato ahead of time to save time. Poke it several times and bake at 400°F (200°C) for about 45-60 minutes until soft.
- For an extra binding agent, add one flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water, let sit for 5 minutes).
- These burgers freeze well; place parchment paper between patties before freezing in an airtight container.
