  • 2 bell peppers (any color), chopped

  • 1 large sweet potato, peeled and diced
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (15 ounce) can tomato sauce
  • 4 cups vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon oregano
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add onion and bell peppers and cook until softened, about 5-7 minutes.
  3. Stir in garlic and cook for 1 minute more until fragrant.
  4. Add diced sweet potato, black beans, kidney beans, diced tomatoes, tomato sauce, and vegetable broth.
  5. Stir in chili powder, cumin, smoked paprika, and oregano.
  6. Bring the chili to a boil, then reduce heat and simmer for at least 30 minutes, or until sweet potatoes are tender.
  7. Season with salt and black pepper to taste.
  8. Serve hot, with your favorite toppings.
