  • 1 large onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 cloves garlic, minced
  • 1 large sweet potato, peeled and cubed (about 2 cups)
  • 1 cup brown or green lentils, rinsed
  • 4 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
  3. Stir in the minced garlic and cook for 1 minute more until fragrant.
  4. Add the cubed sweet potato, rinsed lentils, vegetable broth, diced tomatoes, thyme, and smoked paprika to the pot.
  5. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 30 to 35 minutes, or until the lentils and sweet potatoes are tender.
  6. Season generously with salt and pepper to your liking.
