- 1 large onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 large sweet potato, peeled and cubed (about 2 cups)
- 1 cup brown or green lentils, rinsed
- 4 cups vegetable broth
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1/2 teaspoon smoked paprika
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat.
- Add the onion, carrots, and celery. Cook until softened, about 5 to 7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the cubed sweet potato, rinsed lentils, vegetable broth, diced tomatoes, thyme, and smoked paprika to the pot.
- Bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for 30 to 35 minutes, or until the lentils and sweet potatoes are tender.
- Season generously with salt and pepper to your liking.
- Serve hot, garnished with fresh parsley. Enjoy your bowl of comfort!
Notes
- You can use any color of sweet potato you prefer.
- For a thicker stew, mash a small portion of the sweet potatoes against the side of the pot before serving.
