Instructions
- Preheat your oven to 350°F (175°C). Grease and flour an 8×8 inch baking pan.
- For the crust: In a medium bowl, cream together the softened butter and 1/2 cup sugar until light and fluffy. Beat in the vanilla extract.
- Gradually add the 2 cups of flour and 1/4 teaspoon salt, mixing until just combined.
- Press the dough evenly into the prepared baking pan to form the crust.
- Bake the crust for 15-20 minutes, or until lightly golden. Remove from oven and let cool slightly.
- For the lemon filling: In a separate bowl, whisk together 1 1/2 cups sugar and 3 eggs until well combined.
- Stir in the 1/4 cup flour until smooth.
- Add the lemon juice and lemon zest, mixing until fully incorporated.
- Pour the lemon filling evenly over the baked crust.
- Bake for another 20-25 minutes, or until the filling is set and the edges are lightly golden.
- Let the bars cool completely in the pan on a wire rack before cutting.
- Dust with powdered sugar before serving, if desired.
