  • 1 clove garlic, minced
  • 1/2 teaspoon grated fresh ginger
  • 2 cups cooked brown or white rice
  • 1 tablespoon vegetable oil
  • Optional toppings: sliced green onions, sesame seeds, shredded carrots


Instructions

  1. Heat the vegetable oil in a skillet over medium heat.
  2. Add the rinsed and drained chickpeas to the skillet. Cook for 3-4 minutes, stirring occasionally, until slightly golden.
  3. In a small bowl, whisk together the teriyaki sauce, soy sauce, sesame oil, minced garlic, and grated ginger.
  4. Pour the sauce mixture over the chickpeas in the skillet.
  5. Bring the sauce to a simmer, stirring constantly until the sauce thickens and coats the chickpeas well, about 3-5 minutes.
