- 2 cups cooked rice

Instructions
- In a small saucepan, combine soy sauce, mirin, brown sugar, sake (or water), ginger, and garlic.
- Bring the mixture to a simmer over medium heat, stirring until the sugar dissolves. Cook for 5-7 minutes, or until the sauce has thickened slightly. Remove from heat and set aside.
- Pat the salmon fillet dry with paper towels. Cut into 1-inch cubes.
- Heat vegetable oil in a skillet over medium-high heat. Add the salmon cubes and cook for 2-3 minutes per side, until golden brown and cooked through.
- Add half of the teriyaki sauce to the skillet with the salmon. Toss to coat the salmon evenly. Cook for another minute until the sauce glazes the salmon.
- Divide the cooked rice into two bowls.
- Top the rice with the glazed salmon and mixed vegetables.
- Drizzle the remaining teriyaki sauce over the bowls.
- Garnish with sesame seeds and sliced green onions.
