Savory chicken skewers marinated in a flavorful Thai peanut sauce, grilled to perfection.

- 1 pound boneless, skinless chicken thighs, cut into 1-inch pieces
- 1/2 cup smooth peanut butter
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon grated fresh ginger
- 1 clove garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- Wooden skewers, soaked in water for 30 minutes
Instructions
- In a medium bowl, whisk together peanut butter, soy sauce, lime juice, honey or brown sugar, rice vinegar, grated ginger, minced garlic, and red pepper flakes (if using).
- Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
- Preheat your grill to medium-high heat.
- Thread the marinated chicken onto the soaked wooden skewers.
- Grill the chicken skewers for 8-10 minutes, flipping halfway through, until cooked through and slightly charred.
- Serve hot with extra peanut sauce for dipping.
Notes
- Soaking wooden skewers prevents them from burning on the grill.
- Adjust the red pepper flakes to your desired level of spice.
- You can also cook these skewers under a broiler or in a grill pan on the stovetop.
