Ingredients

  • 1 cup buttermilk
  • 2 tablespoons fish sauce

  • 1/2 cup cornstarch
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

  • Vegetable oil for frying
  • 4 brioche buns
  • For Slaw: 2 cups shredded cabbage, 1/4 cup chopped cilantro, 2 tablespoons mayonnaise, 1 tablespoon sweet chili sauce, 1 teaspoon rice vinegar


Instructions

  1. Combine buttermilk, fish sauce, lime juice, ginger, and garlic powder in a bowl. Add chicken and marinate for at least 2 hours.
  2. In a separate shallow dish, whisk together flour, cornstarch, salt, pepper, and paprika.
  3. Remove chicken from marinade, letting excess drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to coat.
  4. Heat vegetable oil in a deep skillet to 350°F (175°C).
  5. Carefully place chicken into the hot oil, ensuring not to overcrowd the pan. Fry for 5-7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
  6. Remove chicken and place on a wire rack to drain excess oil.
  7. Prepare the slaw by mixing shredded cabbage, cilantro, mayonnaise, sweet chili sauce, and rice vinegar in a bowl.
  8. Lightly toast the brioche buns.
  9. Assemble the sandwich: place the fried chicken on the bottom bun, top with a generous portion of spicy slaw, and place the top bun on.
