Instructions
- Combine buttermilk, fish sauce, lime juice, ginger, and garlic powder in a bowl. Add chicken and marinate for at least 2 hours.
- In a separate shallow dish, whisk together flour, cornstarch, salt, pepper, and paprika.
- Remove chicken from marinade, letting excess drip off. Dredge each piece thoroughly in the flour mixture, pressing firmly to coat.
- Heat vegetable oil in a deep skillet to 350°F (175°C).
- Carefully place chicken into the hot oil, ensuring not to overcrowd the pan. Fry for 5-7 minutes per side until golden brown and cooked through (internal temperature reaches 165°F or 74°C).
- Remove chicken and place on a wire rack to drain excess oil.
- Prepare the slaw by mixing shredded cabbage, cilantro, mayonnaise, sweet chili sauce, and rice vinegar in a bowl.
- Lightly toast the brioche buns.
- Assemble the sandwich: place the fried chicken on the bottom bun, top with a generous portion of spicy slaw, and place the top bun on.

- For extra flavor, add 1 teaspoon of finely minced lemongrass to the chicken marinade.
- You can substitute mayonnaise in the slaw with Greek yogurt for a lighter dressing.
