Description

  • 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1 tablespoon coconut oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1/2 cup creamy peanut butter
  • 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
  • 2 tablespoons lime juice, fresh
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili garlic sauce (adjust to your spice preference)
  • 1/2 cup chicken broth
  • 1/4 cup full-fat coconut milk
  • 1/4 cup chopped fresh cilantro, for garnish
  • Cooked jasmine rice, for serving


Instructions

  1. Season the cut chicken pieces lightly with salt and pepper.
  2. Heat the coconut oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and mostly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  3. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
  4. Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
  5. In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, fish sauce, brown sugar, chili garlic sauce, chicken broth, and coconut milk until the sauce is smooth.
  6. Pour the peanut sauce mixture into the skillet. Bring the sauce to a gentle simmer, stirring constantly until it thickens slightly, about 2-3 minutes.
  7. Return the cooked chicken to the skillet. Stir to coat the chicken completely in the sauce. Cook for another 2-3 minutes until the chicken is heated through and the sauce clings well.
  8. Remove from heat. Garnish with fresh cilantro. Serve immediately over hot jasmine rice.

Notes

  • For a gluten-free version, substitute tamari for the soy sauce.
  • If you prefer a thinner sauce, add a tablespoon or two of water or extra chicken broth while simmering.
  • Serve with steamed broccoli or sliced bell peppers for added vegetables.
