- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 1 tablespoon coconut oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1/2 cup creamy peanut butter
- 1/4 cup low-sodium soy sauce (or tamari for gluten-free)
- 2 tablespoons lime juice, fresh
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon chili garlic sauce (adjust to your spice preference)
- 1/2 cup chicken broth
- 1/4 cup full-fat coconut milk
- 1/4 cup chopped fresh cilantro, for garnish
- Cooked jasmine rice, for serving
Instructions
- Season the cut chicken pieces lightly with salt and pepper.
- Heat the coconut oil in a large skillet or wok over medium-high heat. Add the chicken and cook until browned on all sides and mostly cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3 minutes.
- Add the minced garlic and grated ginger to the skillet. Cook for 1 minute until fragrant.
- In a medium bowl, whisk together the peanut butter, soy sauce, lime juice, fish sauce, brown sugar, chili garlic sauce, chicken broth, and coconut milk until the sauce is smooth.
- Pour the peanut sauce mixture into the skillet. Bring the sauce to a gentle simmer, stirring constantly until it thickens slightly, about 2-3 minutes.
- Return the cooked chicken to the skillet. Stir to coat the chicken completely in the sauce. Cook for another 2-3 minutes until the chicken is heated through and the sauce clings well.
- Remove from heat. Garnish with fresh cilantro. Serve immediately over hot jasmine rice.
Notes
- For a gluten-free version, substitute tamari for the soy sauce.
- If you prefer a thinner sauce, add a tablespoon or two of water or extra chicken broth while simmering.
- Serve with steamed broccoli or sliced bell peppers for added vegetables.
